I've tried renaming some of the files to a few different things, but so far no luck. Does FileBot detect OP & EDs? If so, how do I get it to behave and select the correct files?

No, OP & EDs are not supported at all.
Are you using the amc script? Maybe you can set a minimum filesize to exclude those.
EDIT:
Added an extra filter for input files, everything less than 10 minutes long will be ignored.

Hm.... that could lead to issues with short shows. It's not enabled by default, is it?
It'd really make a hash of shows like these:

I have no trouble excluding <10min show in the amc script. It's automated so for <10min episodes that's a good chance it's fishy and better be ignored. People can still do the tricky stuff in the GUI.
Then you need to exclude them manually. Or filter them out with some filesize limit in Windows Search before you drag them into filebot. Won't add that filter in the GUI otherwise you won't be able to rename these ultra-short shows at all.
OP/EDs are listed on AniDB, but OP/EDs would mean lots extra work fine-tuning, I'd more likely than not mess with some correct matches. There's not even any sort of standard pattern.

To specifically handle this case with a basic standalone script would be pretty easy, but to automatically do this without any knowledge any input it'd be incredibly complicated an make the whole thing error-prone.
This NCED/NCOP sounds pretty specific. What I can is to completely exclude those from any processing just like samples/trailers are handled.
