FileBot

Is there any possibility that support for tagging the videos, instead of solely renaming them is a possibility in the future?
The tagging I'm referring to is that similar to that done by MetaX.

I know you seem averse to tagging even mp3s, but it'd be a huge help in scrubbing extra embedded crap and putting the downloaded information inside to make viewing on ipad and all that way better.

FileBot does use Extended Attributes to save metadata in the filesystem without touching the file data itself. Since it's filesystem attributes this works for any file type.
