There are like 4 different executables in the program file folder. Ok, 3.

Filebot.exe
filebot.launcher.exe
filebot.platform.launcher.exe

What are the differences and which one should I be using?

All of them will work. Use whichever one works best for you and your specific use case.

filebot.exe ➔ console executable (the default filebot command will link to this)

filebot.launcher.exe ➔ GUI executable (the default FileBot Desktop Shortcut will link to this)

filebot.platform.launcher.exe ➔ GUI executable with compatibility settings (alternative to the normal GUI executable just in case something doesn't work with the default settings)
