I've a using UnRaid Docker which allows me to copy files from Folder A (watch folder) to Folder C happily.
I wish to define another watch Folder B to MOVE files to Folder C

How may I achieve so ?

Why not run the above mentioned docker image twice with different configuration options for each instance? The unRAID WebUI should make this relatively simple, though you may need to ask the experts in the unRAID forums for details on how to run multiple instances of a given docker image.
