How do I manually select episodes together to move them from the episode section to the rename section?

You can use CTRL+C / CTRL+V to copy & paste Episode items into New Names.
Option B
You can use drag-n-drop to copy Episode items into New Names.
Option C
You can use Right-Click ➔ Send to Rename to copy Episode items into New Names.
