Hi is there is way to reprocess everything, I need to reprocess everything in the completed folder. The following script I am running.

filebot -script fn:amc --output "/data/Videos" --action copy --conflict override -non-strict --log-file amc.log --def clean=y artwork=y excludeList=amc.txt "/data/Torrents"

What does the log say?

I guess you just need to remove files from the exclude list if you want to reprocess them.
