I wondered about that too, however, I think the headless part refers to the fact that I ran the filebot.sh script from the terminal in that instance, as it does not say headless when I check java -version. OK, so I confirmed that Raspbian comes with oracle-java8-jdk, and when I tried installing it via apt-get it said I already had the latest version.
