Hi,
After updating to the latest version, my presets are deleted and a lot of (for me) useless presets are installed. Deletion of the presets is not possible.
How can I delete them?

What OS are you using? How did you install FileBot? MSI installer (we will assume this unless otherwise specified) or Microsoft Store?
The default Presets will appear if you have no custom user presets. The default presets will be hidden as soon as you have at least one custom user preset of your own.
Your custom user presets can only be deleted by deleting the application data folder. The installer / uninstaller notably does not do that. I cannot tell you what program deleted your %APPDATA%\FileBot folder but it most likely was not the FileBot installer. Your custom user presets are notably stored both in the Windows Registry (primary storage) and the %APPDATA%\FileBot\preferences.backup.xml file (backup one per month) so your settings can only be lost if both storage locations are explicitly deleted somehow.

You could check the %APPDATA%\FileBot folder to see if there are any files with older time stamps. That might give as a clue as to whether or not the entire folder was deleted somehow at some point.
You could check the contents and last-modified time stamp of the %APPDATA%\FileBot\preferences.backup.xml file. FileBot does update the backup once per month, or if no backup exists yet, so depending on the situation, you may find your previous settings there. If you do find your previous settings, then that would be very interesting, a bug that we could fix.
Which version of FileBot did you upgrade from? You could try to reproduce the issue by installing / uninstalling / upgrading different versions to see if you can reproduce the issue. You can easily tell if your settings are lost by checking the %APPDATA%\FileBot\preferences.backup.xml file. If it's gone or empty, then settings are lost.

After creating my presets, I have to click them with every new files I want to rename. The former version of filebot need this choice only at the start.

That is generally how Presets work:
(1) Load files
(2) Click Presets ➔ Organize Episodes for Plex
(3) Click Rename
Do you mean to say that you are primarily using the Episodes tool to manually match files by any chance?

What exactly do you see or do in your "search my series" step?
You would typically do:
(1) Add files
(2) Select Preset
FileBot will then continue to identify the files using the database specified (and possibly ask you to select a series if there are multiple options) in the Preset and then format the matches using the format specified in the Preset. There is notably no "search my series" step before selecting a Preset. That would suggest that we're not on the same page. Maybe screenshots would help?

({e00} - {t}) is a custom format and not a custom preset.
If you just mean to change the default format then you can do Double-Click <New Names item> ➔ Edit Format.
If you click on a Preset then that will process the loaded files with a pre-set database and the format the matches with a pre-set format.
If you click Fetch Data ➔ <database> then that'll use the default format. You'll want to change default format to ({e00} - {t}) if you prefer to use Fetch Data ➔ <database> instead of a Preset to start the process. (NOTE: previous versions had a bug where FileBot would incorrectly use whichever format was in memory; see Forgets Preset Each Time for details)
